cream Guacamole (Mexico)
It 's a very versatile sauce, with endless variations.
The original one (it seems even Azteca) includes only the pulp of avocado, lime juice, Green chili pepper and garlic.
Ingredients 2 ripe Avocados, a little 'soft, with some browning. The consistency may be tested in the palm of the hand and clutching enjoying a slight slowing down.
a white or yellow onion, medium
1 shallot 2 cloves garlic
1 green pepper 2 tomatoes 2 green
Lime
2 green chilies, chili, seeded and chopped sugar cane
salt
Cut the avocados lengthwise, remove the core and with a cucciaino excavate and remove the pulp.
crush the pulp in a mortar (or blender) with garlic, green chillies, remove seeds and chop finely.
Add the chopped tomatoes without seeds, onion and shallot, chopped and washers and continue blending.
Squeeze the lime juice and put them in the blender and continue blending until you get a smooth, velvety sauce.
Serve with tortilla chips sprinkled with lime juice and salt
